The video below goes over some of the basic missions or types of adventures to run in Traveller. From the video description: "This beginner-friendly guide breaks Traveller adventures into eight recognizable mission types: deliver, explore, investigate, rescue, protect, acquire, hunt, and survive." But even though the video is specifically discussing Traveller, which is a science fiction TTRPG, most of the types of missions/adventures are applicable to other types of genres and settings.
For instance, the "survive" mission could in almost game setting involve surviving a ship wreck; in modern settings, a plane crash; or getting lost and trapped in snow storm. Throw in a complication--such as a mystery--and you could have something like Death on the Orient Express; or the characters might be trapped in a snow storm with a psycho killer, a wendigo, or alien beast picking them off one by one.
